Hybrid Restaurant - a new restaurant situated conveniently on the ground floor of Koharu Resort.  Lyoma is a Japanese-Canadian chef and the menu specialises in chargrilled meats and fish with locally sourced seasonal ingredients. Featuring Japanese dishes with European culinary influences such as WAGYU BEEF STEAK - charcoal grilled shinshu wagyu sirloin steak,  HAKUBA PORK STEAK - charcoal grilled hakuba pork steak, koji butter, apple & cabbage sauerkraut, SHINSHU SALMON - charcoal grilled shinshu salmon, cauliflower puree, dill oil, SHINSHU FUKUMIDORI CHICKEN - shoyu koji cured egg yolk and many other small plates.
